Dominating the surrounding countryside, the castle recalls the troubled years of the Cathar Crusade while also celebrating the rich cultural world of medieval troubadours. Saint-Hilaire Abbey
The final stop brings you to the peaceful Abbey of Saint-Hilaire, one of the oldest monastic foundations in the region.
Its elegant cloister, Romanesque architecture and tranquil atmosphere offer a striking contrast to the mysteries of Rennes-le-Château and the defensive walls of Puivert.
The abbey is also renowned as the birthplace of Blanquette de Limoux, where Benedictine monks are believed to have produced sparkling wine centuries before Champagne became famous.
It is the perfect place to end the day, reflecting on the rich religious, cultural and historical heritage of the Languedoc.
