the people that make this area so special. Staying at 42 Rue Victor Hugo
puts you right at the heart of the action, in the Bastide St Louis, the
working heart of Carcassonne. They offer 2 huge and self-contained
apartment suites on the first floor of a grand listed 18th century
building. Think original parquet floors, marble fireplaces, stunning
cornices and soaring 4 meter high ceilings then add in your 21st century
comforts, wifi, ipod docking stations, flat screen tv and dvd player,
the best 400tc bed linens, fitted kitchens and plenty of space to just
kick back. Everywhere is easily accessible by foot so you can just pop
out to take a coffee in the square or grab a bite of lunch, explore the
shops or drop into a medieval church, amble alongside the banks of the
Aude river or have the Cité almost to yourself in the evenings when the
tourists have gone home.

Start with a half day wine tour that includes
lunch with Wendy from Vin en Vacances. She’ll pick you up and whisk you
off and explain all there is to know about the region and the wines and
why they are so special. It’s always interesting, informative and good
fun. Then when you get dropped back at the apartment join Peter for
cocktails and canapés before you head out for supper at one of the towns
many superb restaurants.
Saturday is market day and a day for shopping and cooking – after breakfast Peter will take you on an escorted tour of the producers market as well as the covered market (Les Halles) and load up the baskets with fabulous seasonal produce. After a coffee and a breather you’ll head into the kitchen at 42 Rue Victor Hugo to help prepare a 3 course lunch and learn about the flavours and techniques of this special region. Your evening is then free to either head out for dinner or just relax in your suite.
Sunday morning, after breakfast we suggest you
head up to explore the medieval Cité or take a leisurely stroll along
the river or the Canal du Midi before joining us again for a fantastic
evening of fine food and wines. Wendy will start off with a tutored wine
& food matching class where you will learn which wines go with
which flavours and taste an amazing variety of regional, hand produced
wines. This is followed by a delicious and convivial 4 course dinner
with matched wines and will probably involve Peter’s famous signature
chocolate fondant!
Monday morning means a leisurely lie in with breakfast in your suite before you head off home or on to pastures new.
